The chickpeas, awesome as always. Really, I'm adding it to favorites. The spanish rice, a more-true attempt this time, we really did attempt to brown the rice and onions, and it turned out OK. I cut the salt by half, but I think that was a mistake, it could have used more salt. Anyway, mediocre, I don't think I'd make it again, though it is unusual. The meringue, we have no idea why, but it basically wouldn't foam/beat. After 10 minutes in the stand mixer, still mostly liquid with a layer of foam. We tried adding more cream of tartar and even some corn starch, but no dice. I think maybe the aquafaba was weird, it wasn't as clear as I remember it being the time it worked (more cloudy, more yellow, perhaps the cans were older?).
